10 Minute Recipe: Garden Veggie Soup

Warm belly, warm heart.  Screen shot 2013-02-19 at 2.44.20 PMThere’s nothing better on a cold, rainy day than cuddling up with a warm bowl of soup.  I love this garden veggie soup recipe, it’s delicious and SO SO healthy.  If you’re anything like me, packing in several servings of veggies a day is tricky, but this soup contains mostly vegetables, with just enough spice to make it yummy! Here’s what you’ll need:

Veggies: Any assortment of veggies works, but here’s what I like to use– sliced onion, chopped spinach, carrots, mushrooms, tomatoes, zucchini, squash

fresh oregano

1/2 tsp dried basil

garlic, minced or you can use garlic salt too!

1 cup fat-free chicken or vegetable broth

1 tsp tomato paste

Directions

Spray a large saucepan with nonstick cooking spray, and heat.

Sauté vegetables over low heat for 5 minutes, until softened.

Add broth, tomato paste, basil, and oregano. Bring saucepan to a boil.

Reduce heat, and simmer, covered, for 5 minutes.

Enjoy in your pj’s with a cozy blanket, I swear it tastes better!
